A Cultural Trip | 3 Bahamian Holiday Dishes

With the holidays right around the corner you might be scrambling to put together a menu. Here’s some quick cultural dishes to add to your holiday dinner to surprise your family and friends with the taste of the Bahamas!

Appetizer

Quick Conch Salad

½ cup finely diced sweet pepper

½ cup finely diced cucumber

½ cup lime juice

½ cup finely diced celery

½ cup finely diced onion

2 fresh tomatoes, chopped

Salt to taste

Directions

Mix all ingredients together and allow to marinate.

 

Main course

Stew Fish

2½ pounds grouper fillet or fish of choice cut in serving portionsstew-fish

1/3 cup oil

¾ cup flour

1 small onion, chopped

¼ teaspoon thyme

2 tablespoon tomato paste

3 tablespoons tomato sauce

6 cups water

Salt and pepper to taste

Directions

Heat oil in heavy skillet; blend in flour and brown well, stirring constantly to avoid burning.

Add onion, thyme, tomato paste, and tomato sauce; mix well.

Heat 6 cups water to boiling; add flour mixture and simmer for about 15 minutes, stirring occasionally.

Add fish, salt and pepper; cook for 20 to 30 minutes, or until fish is tender.

 

Dessert

Guava Duff

12 guavas, peeled (or 14 oz canned guava shells)
½ cup sugar
1 tsp cinnamon
1 tsp allspice, ground
4 cups flour
3 tsp baking powder
1 tsp salt
¾ cup shortening
¾ cup milk
1 egg, beaten

Rum Butter Ingredients:
1 cup confectioners sugar
¼ cup butter
1 tsp boiling water; dash of salt
2 tbsp rum or brandy to taste

Directions

Peel guavas, cut in half and remove seeds.

Dice the guava and strain to remove juice, saving the juice to flavor sauce if desired.

Place the guava in saucepan and cover with water.

Add sugar, cinnamon and allspice, the simmer until fruit is soft.
